Did someone say FREE quesadillas??

It seems that I've entered that busy mom phase...you know, the one where I'm constantly in my mini-van driving the kids all over God's green earth.  I'm either coming or going these days.

As much as I would love for my family to eat a home-cooked meal every single night, it's just not possible. 

So on those evenings where we have soccer practice until 6:00 pm or a playdate at the park which runs a little late, I find myself scrambling to come up with something edible. 

Recently, my family and I were offered the opportunity to review yet another

Farm Rich product...remember we tried the mozzarella bites and truly enjoyed them! 

This time we tried the chicken quesadillas, described by Farm Rich as "thin, authentic tortilla-style crust stuffed with a special blend of 100% real Mozzarella, Cheddar, & Monterey Jack cheeses and grilled, all-white meat chicken with a zesty kick".

Now, I know quesadillas aren't very difficult to make and they can be fairly quick to put together BUT....

....when you have 4 hungry children chomping at the bit, the last thing you want to be doing is shredding cheese and frying up tortillas.

I made the quesadillas one evening after soccer practice when we were short on time, of course.  I popped those little babies into the oven and we read books while they cooked in just a matter of a few minutes.

Once they were done, I served them on a plate, alongside two little dishes filled with sour cream and salsa....

We all agreed that these quesadillas were out-of-this-world delicious!  The kids were asking for seconds before I could even finish my first one and Tim, who's as picky as they come, said, "Wow, these aren't bad!" as he grabbed a couple more off the baking sheet.

The minute you bite into these little morsels of goodness, your mouth is filled with gooey cheese and tasty chicken.  I also liked the fact they didn't fall apart at all like my homemade quesadillas tend to do. 

Okay, so after reading this, I'm sure you all want to try one of the Farm Rich products, don't you?

Looks and sounds delicious! I like quesadillas as well for a quick meal. If not, then it's ramen noodles.

Quesadilla night at my house is self serve. Grab tortilla, load up, head for grill pan. Teenagers love it. I love it, because I don't have to cook and I have only one pan to clean up.

I keep homemade entrees cooked and frozen. ( I started this when I was teaching and it's so dang handy I've kept it up) I could come home bake a 'tader and toss a salad and have a great meal on the table in ten minutes. I was always big on everybody eats the evening meal together. Now in a pinch for me and Farm Boy an egg sandwich is always a hit!

Golly gee, they had plenty of things to choose from. I'm just torn between the Pizza, Philly Steak or Quesadilas. Pizza, Pizza, yep I choose Pizza!!!

My quickie meal is Dijourno (Spelling is questionable!) Pizza. It's as good as take out and cheaper! Please put me in the drawing.

My favorite quickie-meal is the instant rice in bags that you micro for 90 seconds. I just add some pre-cooked chicken cubes. They LOVE it. And the rice comes in different flavors, so it doesn't get old eating it for dinner or lunch 3 times a week! Also steam in the bag veggies are great to make it 'dinner'!

I am CRAVING quesadillas now. Thanks a lot. :-) I would actually love to try them. It's not often I get enough time in the kitchen to actually prepare a meal.

I keep a bag of frozen meatballs in the freezer, so when we need a quick meal, I can heat some up in the microwave. Along with some frozen veggies. I might toast some bread and add garlic butter if there are a few extra minutes! :)

OK, well, I'm lame, but I like to keep a dozen hard-boiled eggs in my fridge, and then whenever I want, wah-lah, egg-salad in minutes!

Another quick favorite is to keep frozen tortellini on hand, along with a garlic alfredo sauce and frozen hot italian sausage (just ground meat). Cook the noodles, brown the sausage, and combine with the sauce, throwing in some chopped up onions we always have on hand (because we're big fans) and it's a delicious garlic alfredo tortellini with sausage and onion meal in about 10-15 minutes (depending how long the water takes to boil). One of my favorite meals AND easy!!

Wow..the quesedillas look GREAT as an entre..but the mozz bites and the cheese sticks do, too! I'd probably go with 'dillas..but I want to try them all! If you can't tell, I'm a cheese fan(atic)
