Are you a busy mom looking to simplify your life? GIVEAWAY!!

As a busy and stressed out mom of 4 young children, I'm constantly looking for ways to simplify my life.

I used to look at Kate Gosselin as another mom of multiple multiples and think, "Wow, she's really got it together...and even manages to find the time to cook from scratch for her family".

It left me feeling guilty for taking advantage of those convenient freezer meals I'd often stock up on with every trip to Costco.  Chicken nuggets, taquitos, bagel bites...you name it, we had it.

Then I learned that Kate had a personal organic chef and all my beliefs about her (and guilt) went out the window.

I had to find a new role model...someone who understood the demands of motherhood but also believed in the importance of providing delicious, home-cooked meals for her family.  Someone who was REAL...and, most importantly, someone who practiced what she preached.

Someone like Jenna, my amazing fellow twin mommy friend, who just published her very first e-cookbook - E-licious: Must Have Recipes for Every Occasion.

Let me tell you a little about Jenna because she is simply AMAZING!

She's a SAHM to her adorable twin boys and a loving wife to her trucker husband.  In addition to balancing her roles as mom and wife, she raises the cutest little chickens and proudly showcases them on her blog.  Together, she and her husband plant and harvest the most spectacular gardens each season, growing most of their own food.

I've been following Jenna's blog, The Newlyweds, for at least a couple years now and she's the person who got me excited about gardening, cooking meals from scratch and menu planning.

In fact, the first summer I decided to start a fruit/vegetable garden, she held my hand the entire way and never once complained about the endless e-mails I'd send her with annoying questions.  Now, I have her to thank for the abundance of beautiful fruits and veggies we've been able to enjoy for the last two summers!

Each week, Jenna would post her family's menu for the week, along with links to the recipes.  For her own personal recipes, she would post step-by-step directions along with pictures which will leave you drooling.

What I love is that she makes cooking look easy...and fun.  And Lord knows how much I dislike being stuck in the kitchen so for me to be excited about cooking is saying a lot.

I began making some of her recipes, like the Sticky Chicken in a Crockpot (which is now a weekly staple in our home) and the cheesy enchiladas.  Not only did my family enjoy these recipes but they were simple and delicious.  And there's no better feeling than providing a wonderful home-cooked meal for your family.

When I heard that she was finally publishing a cookbook, I was super thrilled for her!   I could easily see her being the next Pioneer Woman someday, with her very own cooking show!

Even though my kids are grown up and gone, I still have to prepare meals for hubby and me. And I'm not fond of spending time in the kitchen anymore. As a result, I always make enough for two meals and freeze one--hubby doesn't like eating the same thing two days in a row! I'd love to win this cookbook.

Wow. Drooling over those pictures!

We raise our own chickens and the hubby does a mass processing of them once a year (I refuse to be involved in that part). We'll smoke one or throw it in the crockpot, then divide it up into tupperwares of 2 cups each - perfect size for casseroles or enchiladas or whatever. Then I've always got cooked chicken ready to go.

I love my crockpot! So easy to just throw the stuff in there and let it go. I also try to meal plan, although it's not always easy when you are running your 8 year old to soccer practice after school and your 6 year old twins to dance class at supper time. Good times! If I am making something like lasagna, I will make 2 or 3 and freeze the extra ones.

We've recently started doing family meals...where the girls eat the same thing we do. Like everyone else so far we make extra to have for lunches or freeze for later. Doing the family meal means we don't have to prepare one meal for the girls and another one for us later in the evening. We're also trying to teach them to eat what's in front of them since meatballs and fresh fruit might not always be an option.

Would love to get some new ideas to include in our repertoire.

All this food talk is making me hungry. My time savers for cooking is i try to plan 2 big meals a week. Like pulled pork or chili which will work as leftover, lunch or another dinner. I usually use leftover pork in quesadillas one night.

My shortcuts... I think to use the crockpot, but can't get past meat and carrots and potatoes (which I hate). Would love to win this!

Oh my goodness I could so use this!! I keep my breakfast simple for my family. We all love these super healthy and tasty green smoothies so that's what we all have in the mornings! I'm always looking for healthy meals because I too need to overcome the microwave meals!

I'm a huge crockpot user to make meals simpler. It's nice to come home and just have to add a few things to an already cooked meal. I feel like it makes me less stressed before I even leave the hosue!

Before I retired from the classroom, I started cookin' in batches and freezin' entrees. When I got home from school I could 'nuke a tator, toss a salad and have dinner on in a flash.

I was big on havin' the whole family sit down together for supper.

Now...I have to say I was havin' a great day eatin' healthy but now for some silly reason...I WANT CHEESECAKE!!! Heeheehehe!

I would love to win! I decided last night I don't want to cook anymore. Period. Since that's not an option I need simple delicious ideas! I must admit to simplify I often cook easy stuff - like from a box. Not the best but sometimes that's all I can do!

Lately on Sunday we plan ahead for the week (taking into account soccer and everything else) and we just know that some days, are going to be quick not-so healthy microwave items from the freezer or a box/can. We try to plan 2 or 3 easy things that are healthly that everyone likes, either crock pot or a quick saute that my husband can put together.

Sounds like a great book!
I started making a 'menu' for the week, it saves me time throughout the week.. I'm not 'hmm-ing' about what to make for dinner that night. I do it all at 1 time..
And we usually have a pizza night (although we make it.. it doesn't take that long), and I give Jerk Face something to make us at least 1 night a week.. :)

How do I simplify meal time? I let my husband do the cooking! Bahaha...At 8 weeks pregnant with baby #5 the smell of cooking meat turns my tummy so he doesn't mind pitching in for now. I'd love to find easier ways to make meals for the family, especially one as big as ours will soon be!

I try to plan in advance, use the crock pot as much as possible, and when all else fails it's time to pull out cereal or pb & j sammies!!

Love Jenna's blog! I've been following for awhile. I have been trying to find some really good crock pot recipes to simplfy my life but I never find anything that I really like. I need to hunt down that sticky chicken recipe you mentioned in your post!
